CATFISH RECIPE
Filet catfish with skin on, and dry with paper towel
Lightly sprinkle all purpose flower over the meaty part of filet
Add lemon pepper and cayenne pepper to liking
Add 1/2 inch deep of Canola oil to a cast iron skillet
Pan fry on medium heat until golden brown
Serve with a little hot sauce, and a smile
